Product Description
SODIUM LACTATE is the sodium salt of L(+) lactic acid produced by sugar fermentation.
It is a 60% solution, yellowish liquid with a slightly saline flavor.
The improved shelf-life results from the strong humectant properties of SODIUM LACTATE. This water holding capacity locks in the free moisture in the formulation which lowers the water activity in the finished product. In
addition, the lactate ion present in SODIUM LACTATE retards microbial growth.
Reasons For Using Sodium Lactate
Dramatic increase in shelf-life.
Replaces nitrite because it has no influence on the colour of the meat
Outstanding processing aid for processed products, especially in low salt items.
Increased yields and reduced formulation costs.
Improved texture as natural juices are retained in the product.
Neutral pH
Applications:
(1) It can be widely used as emulsifier, moisturizing, flavor improver, quality improver, antioxidant synergistic agent and pH regulator is widely used inin meat and poultry products processing industry, it can enhance flavor, inhibit the growth of pathogenic bacteria in food, extend the shelf life of products;
(2) As food antistaling agent, flavorings, antifreeze etc, it has already partly replaced sodium benzoate for preservative in food industry.
